Apple Pie
Ingredients
For the Apple Filling:
6 to 7 cups peeled, cored, and sliced apples (a mix of tart and sweet varieties, such as Granny Smith and Honeycrisp)
3/4 cup granulated sugar
1/4 cup brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
2 tablespoons lemon juice
3 tablespoons cornstarch
For the Pie Crust:
2 1/2 cups all-purpose flour
1 cup unsalted butter, chilled and cut into small cubes
1 teaspoon salt
1 tablespoon granulated sugar
1/4 to 1/2 cup ice water

For the Pie Crust:
Prepare Ingredients:
Make sure your butter is cold, and measure out the ice water. Keeping everything cold will help ensure a flaky crust.
Mix Dry Ingredients:
In a large bowl, whisk together the flour, sugar, and salt.
Add Butter:
Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your hands to incorporate the butter until the mixture resembles coarse crumbs.
Add Water:
Gradually add the ice water, a tablespoon at a time, and mix until the dough just comes together. Be careful not to overmix.
Form Dough:
Divide the dough into two equal portions, shape each into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour.
For the Apple Filling:
Preheat Oven:
Preheat your oven to 425°F.
Prepare Apples:
Peel, core, and slice the apples. Toss the apple slices with lemon juice to prevent browning.
Mix Filling:
In a large bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, salt, and cornstarch. Mix until the apples are evenly coated.
Assembling the Pie:
Roll Out the Dough:
On a lightly floured surface, roll out one disc of pie dough to fit a 9-inch pie plate. Place it in the pie plate, trimming any excess dough from the edges.
Add Filling:
Pour the prepared apple filling into the pie crust, spreading it evenly.
Top with Second Crust:
Roll out the second disc of pie dough and place it over the filling. Trim any excess dough and crimp the edges to seal the pie.
Ventilation:
Cut a few slits in the top crust to allow steam to escape during baking. You can also create a decorative pattern if you like.
Bake:
Place the pie on a baking sheet (to catch any drips) and bake in the preheated oven for 45-55 minutes or until the crust is golden brown, and the filling is bubbly.
Cool:
Allow the pie to cool for a few hours before serving to allow the filling to set.
